A Mother’s Love

There are times only when a Mother’s love
Can understand our tears,
Can soothe our disappointments
And calm all our fears.

There are times when only a Mother’s Love
Can share the joy we feel
When something we’ve dreamed about
Quite suddenly is real.

There are times when only a Mother’s faith
Can help on life’s way
And inspire in us the confidence
We need from day to day.

For a Mother’s heart and a Mother’s faith
And a Mother’s steadfast love
Were fashioned by the Angels
And sent from God above…

This Sunday 10 May is Mother’s Day……a day where we can spoil mum with homemade cards, lots of cuddles, a special breakfast but most of all, to say thank you for everything she does each and every day. Thank you for the dinners cooked or the take away collected, for the bedtime stories, for the sequences stitched onto dance costumes, for the early morning sports, for kissing away the tears, for cheering on the sidelines,  most of all….Thank you for being Mum!

Make something special for mum that she will absolutely love and treasure forever, or why not spoil Mum with breakfast in bed with these delicious Blueberry Pancakes.  Whatever you get up to this Mother’s Day, be sure to tell mum you love her and how appreciated she truly is.

RECIPIE OF LOVE

INGREDIENTS

  • 1 1/2 cups milk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups White Wings self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/3 cup caster sugar
  • 25g butter, melted
  • 1 teaspoon vanilla extract, extra
  • 1 1/2 cups fresh or frozen blueberries

METHOD

Step 1
Whisk milk, egg and vanilla together in a jug. Sift flour and bicarbonate of soda into a bowl. Stir in sugar. Make a well in centre. Add milk mixture. Whisk until just combined. Stir in extra vanilla and blueberries.
Step 2
Heat a large non-stick frying pan over medium heat. Brush pan with butter. Using 1/4 cup mixture per pancake, cook 2 pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook for 3 minutes or until cooked through. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture, brushing pan with butter between batches. Serve.
*This recipe can easily be made Gluten free by substituting with Gluten free flour
